If you want to eat something light for dinner it is nice to go for soup. I prefer to make my soups myself. Because a plain soup can be pretty boring I always add some things to my soups (like in this case: bread, pine nuts and pulled chicken).
Ingredients for two persons:
- 1/2 union
- 1/2 potato
- 150 gr broccoli
- 1 tablespoon of olive oil
- 500 ml water
- one block of chicken stock
- 1,5 tabel spoon of creme fraiche
- Pepper and salt
- pine nuts
- bread (whatever you like)
If preferred: pulled chicken (you can buy already made pulled chicken in the supermarket now)
Cut the union, broccoli and potato. Put the olive oil in a pan and cook the union. Add the broccoli (almost all) and the potato. Add the water and the stock block. Cook everything on low heat for 15 minutes. Blend it with a blender and add pepper and salt. Cook the pine nuts short on low heat. Put the pulled chicken in the microwave. Slice the bread. Add some small pieces of broccoli, the creme fraiche, pine nuts and pulled chicken to the soup.
