One of my favorite simple homemade dinners is grilled vegetables with feta cheese. It is both healthy and fast. Also ideal as a side dish when you have guests.
– Half an eggplant
– Half a zucchini
– 75 gr. feta cheese
– 1 tomato
– Olive oil
– Herbes de Provence
Drizzle some olive oil on the vegetables. Then grill them on medium heat till golden brown stripes appear.
Slice an tomato and put it together with the vegetables on a plate. Break some feta cheese in little pieces and put that on top. Top off with some herbes de provence and add salt and pepper by taste.
