Mini wraps with coleslaw, lettuce, fresh parsley, carrot (julienne), pulled pork and barbecue sauce are maybe one of the most simple dinners I have ever made. The mexican twist makes it an ideal starter for when you are having friends over.
Nowadays you can buy already prepared pulled pork at the supermarket. You could warm it up or serve it cold.
You could also make this vegetarian and use fried black beans and cheese instead of the pulled pork.
